Most people think of Destin as a summer destination — and during July, it's one of the most crowded beach towns in the Southeast. But December is a different story entirely. The tourists are gone, rental rates are 40–50% lower than peak season, restaurants have actual availability, and the beaches are genuinely quiet. The weather is mild for a reason Floridians call it "sweater season" — highs in the low 60s, breezy, sunny enough that you'll be outside most of the day.
This isn't a guide that pretends December is secretly just like August with a Santa hat. It's not — the water is too cold to swim, and the full summer activity lineup isn't running. But if you know what December actually offers, it's one of the best times to be here. Here's the honest breakdown.
Destin in December averages highs of 61–65°F and lows in the mid-40s. Cold fronts roll through periodically, dropping temperatures for a day or two at a stretch, but they clear quickly and the sun comes back strong. Rainfall is minimal — December is actually one of Destin's drier months, so the old "wait, doesn't it rain a lot in Florida in winter?" concern doesn't hold here.
The Gulf water temperature in December is around 60–65°F — technically swimmable for a determined person, but most people won't want to get in for more than a few minutes. That said, it's still the most beautiful water in the country at any temperature. The emerald-green color is just as striking in December as it is in August, and you'll have the beach almost entirely to yourself to appreciate it.
What to pack: light layers that you can add or remove. A fleece or light jacket for evenings and cold-front days, a sweater or light pullover for mornings, and shorts or light pants for the warmer afternoons. Sunscreen still matters — December sun angle in the Florida Panhandle is lower but the UV can still get you, especially on the water. Closed-toe shoes or sneakers for evenings are smart.
The practical upside of December weather: You can walk the beach for hours without overheating. Hiking trails at Henderson Beach and Topsail Hill are downright pleasant. If fishing is part of the plan, December is legitimately excellent — and this isn't a "great fishing any time!" generic statement. There are specific reasons December stands out at Destin Harbor:
Cobia and Spanish mackerel are actively feeding in winter around nearshore reefs and structure. Amberjack season is typically open in December on federal waters (unlike summer, when it's often restricted). Red snapper federal season is usually closed in December, but state waters have their own rules — your captain will know the current regs. Inshore fishing for redfish, speckled trout, and flounder in the Choctawhatchee Bay can be excellent on calm December days, especially on warming afternoon tides.
The practical advantage: December charter availability is much better than summer. You're not competing with 100 other groups for the best captains. The single most underrated thing about Destin in December is the beach itself. You'll walk for a mile on some of the most beautiful white quartz sand in the world and encounter maybe a dozen other people. No beach chairs stacked to the dunes, no umbrella-to-umbrella packing, no fight for parking. Just the beach the way it looks in the better travel magazines — pristine, open, and quiet.
Henderson Beach State Park is at its best in December. The coastal scrub nature trail is shaded and breezy, the dune vegetation is still green, and the Gulf views from the trail are remarkable without summer heat making every step unpleasant. Entry is $6/vehicle. The beach itself at Henderson is dog-friendly on leash — locals use it heavily in winter for long morning walks that would be miserable in July.
Topsail Hill Preserve State Park, about 30 minutes east near Santa Rosa Beach, is even more dramatic in December. Three miles of undeveloped coastline, dune lakes accessible only through the park, and almost zero crowds. The tram ride to the beach runs on a regular schedule even in winter. This is one of the most beautiful spots on the entire Gulf Coast — December is the right time to see it without the summer mob.
Shelling tip: Winter storms and northeast swells bring more shell deposits to Destin's beaches than calm summer conditions. December and January can be surprisingly good shelling months — nothing like Sanibel, but noticeably better than August. Walk the wrack line after any overnight rough water for the best finds.
December rental rates in Destin are typically 40–55% lower than peak July pricing. A house that rents for $600/night in the height of summer might go for $250–325/night in December. Restaurants don't require reservations weeks in advance. Parking at the harbor is free or easy. The whole vacation is more relaxed because you're not fighting the summer apparatus at every turn.

What to calibrate your expectations on: Big Kahuna's Water Park is closed. Most watersports operators (parasailing, jet ski rentals) are either closed or operating on very limited schedules. Crab Island activity is minimal. The Destin Seafood Festival and summer music scene are months away. If those are the anchors of your Destin vision, December isn't the right trip — plan for May or June instead.
The restaurants stay open — most year-round spots don't close in December. AJ's, LuLu's, McGuire's, Harbor Docks, Dewey Destin's — the solid locals' favorites all run through winter. Some reduce hours on weekday evenings, so a quick call before showing up is worth it. But you won't be stuck eating at a chain because everything good is closed.
