AJ's is Destin's most iconic bar — full stop. Located at HarborWalk Village on the working harbor, it occupies a three-story open-air structure with progressively better views as you climb. The ground floor is any good seafood restaurant. The middle level opens to a covered deck with harbor sightlines. The top deck is the destination: open sky, Gulf breezes, and a direct view across the charter fishing fleet and Destin Harbor pass toward the Gulf of Mexico. Tables up top fill by 4 pm on summer weekends — plan accordingly.
What to order: The frozen Bushwacker is the signature — rum-based, creamy, and deceptively strong. Gulf oysters on the half shell are the right snack while the sunset light shifts. Canned domestic beer runs $6–8 and is cheaper than mixed drinks; the vibe on the top deck is casual enough that nobody cares if you came just for drinks and the view.
Timing: Arrive by 3 pm Thursday through Saturday in peak season (June–August) for a top-deck table. Golden hour over the harbor runs approximately 7:30–8:30 pm in summer. Just up the boardwalk from AJ's, Harbor Docks takes a different approach: local institution, not tourist spectacle. The upstairs deck overlooks the same harbor at noticeably lower prices. Locals eat here. The fish is genuinely boat-to-table — Harbor Docks has direct sourcing relationships with the fleet docked below and posts its daily catch on a chalkboard. A dozen raw Gulf oysters runs $18–24; grouper plates land around $22–28. The upstairs bar keeps it simple: draft beer, well cocktails, and wine by the glass. On Tuesday and Wednesday nights in season, you can almost always walk in without a wait for an upper-deck table — a rare thing during Destin summer.
Also on the HarborWalk strip: Lucky Snapper Grill & Bar has a second-level open-air section with solid cocktails and a mellower atmosphere than AJ's — a useful backup when AJ's top deck has an hour wait. Bric a Brac, near the HarborWalk parking entrance, has covered outdoor seating right on the harbor with a craft-beer-and-bites energy that suits an afternoon session before the dinner rush.
Happy hour window: Most HarborWalk bars run specials from 3–6 pm. AJ's and Lucky Snapper typically discount frozen cocktails and half-shell oysters during that window. Arriving at 3 pm and claiming an upper-deck table before the crowd builds — then staying through golden hour — is the optimal move. You pay happy-hour pricing for the entire best part of the day.
For a different kind of elevated experience — resort atmosphere instead of harbor-bar energy — the Henderson Beach Resort & Spa on Scenic Gulf Drive (a Curio Collection by Hilton property) has a pool terrace and bar area that faces directly onto the Gulf. It's not technically a rooftop, but the elevation and unobstructed Gulf view make it function like one. The Henderson's private beach is one of the best stretches of sand in the Destin corridor, and the bar view from the terrace — emerald water to the horizon, no building in the way — is legitimately one of the best places to have a drink on the Emerald Coast.
What to expect: Cocktails run $18–24. The drink quality is several tiers above a HarborWalk frozen blender — proper craft cocktails with fresh citrus. Non-guests can use the pool area and bar with a minimum food-and-drink spend (call ahead to confirm current policy for your visit date, typically $25–35 per person). The terrace is quieter and more polished than the harbor strip, which makes it the right call for couples celebrating something or groups wanting a nicer atmosphere before dinner.
Best time: Late afternoon, 4–6 pm. The Henderson faces southwest, so the sunset hits the Gulf water directly in front of you. In July and August, the light is best from about 7–8 pm. If you want a true, dedicated rooftop bar — open-air top floor of a building, Gulf view from above the roofline — the best one within range of Destin is a 40-minute drive east: Pescado Seafood Grill & Rooftop Bar in Rosemary Beach on Scenic 30A. This is an actual rooftop: open-air top floor with unobstructed Gulf views, tiki torches at the rail, and a sunset that hits the full Gulf horizon without any building in the way.
Pescado is a proper restaurant (grouper crudo, Gulf shrimp, seared tuna — all well-executed), but the rooftop bar is accessible without a dinner reservation. Happy hour runs 4–6 pm with reduced cocktail pricing. The rooftop fills fast on summer weekends — arrive by 4:30 pm if you want a rail seat for sunset. Entrees run $28–42; rooftop cocktails $14–18.
Building a day trip around it: Start the morning at Grayton Beach State Park — consistently rated one of the best beaches in the Florida Panhandle. Walk Rosemary Beach's pedestrian-only town center in the afternoon (the architecture and boutique shops are worth an hour). Wrap up at Pescado for the sunset session. The 30A drive from Destin is scenic enough that the trip itself feels like part of the experience.

Weekdays after Labor Day are outstanding: bars are open, views are identical, and you can claim an upper-deck table on a Tuesday at 6 pm without a wait or a plan.
